  • 1 tablespoon pure maple syrup (optional)
  • ½ cup unsweetened coconut shreds or flakes

Instructions

  1. Blend frozen mangoes in a blender or food processor until crumbly.
  2. Add full-fat coconut milk and maple syrup (if using). Blend until smooth, scraping down sides as needed. Stir in coconut shreds.
  3. Pour the mixture into popsicle molds, leaving about ¼ inch space at the top. Insert sticks according to mold instructions.
  4. Freeze for 6-8 hours or until solid.
  5. To remove popsicles, run warm water over the outside of the mold for a few seconds before gently wiggling them out.
