- 1 cup crushed chocolate cookies
- ¼ cup unsalted butter (melted)
- 1 cup sweetened shredded coconut
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup coconut milk
- 1 tablespoon gelatin powder
- 3 tablespoons cold water
- ½ cup semi-sweet chocolate chips
Instructions
- Combine crushed cookies and melted butter; press into the bottom of a springform pan. Chill.
- Bloom gelatin in cold water; then heat coconut milk, coconut, and powdered sugar until warm. Stir in gelatin until dissolved.
- Whip heavy cream with vanilla until stiff peaks form; fold into the coconut mixture. Pour over crust and chill for at least 4 hours.
- Prepare ganache by melting chocolate chips in heavy cream over low heat; cool slightly before pouring over set mousse.
- Chill again for one hour, then slice and serve.
