Description

This Coca-Cola Cheesecake combines the smooth, creamy texture of a classic cheesecake with the rich caramel flavors of Coca-Cola. A Coca-Cola reduction is mixed into the batter for depth, while a glossy Coca-Cola glaze adds a sweet finishing touch. Perfect for special occasions or as a unique treat for soda lovers!

Ingredients

Scale

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup brown sugar

For the Cheesecake Filling:

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3/4 cup Coca-Cola (to be reduced)
  • 2 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tbsp cornstarch

For the Coca-Cola Glaze:

  • 1 1/2 cups Coca-Cola
  • 1/2 cup brown sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

Step 1: Prepare the Coca-Cola Reduction

  1. Pour 3/4 cup Coca-Cola into a saucepan over medium heat.
  2. Simmer until the liquid reduces by half to create a thick, concentrated syrup.
  3. Remove from heat and allow it to cool.

Step 2: Make the Graham Cracker Crust

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, melted butter, and brown sugar in a bowl.
  3. Press the mixture into the bottom of a greased 9-inch springform pan.
  4. Bake for 10 minutes, then let it cool.

Step 3: Prepare the Cheesecake Filling

  1. In a large bowl, beat softened cream cheese until smooth.
  2. Add sugar and mix until fully incorporated.
  3. Pour in the Coca-Cola reduction and vanilla extract, mixing well.
  4. Add sour cream and cornstarch, mixing until just combined.
  5. Add eggs one at a time, mixing on low speed to avoid overmixing.

Step 4: Assemble & Bake the Cheesecake

  1. Pour the batter over the crust and smooth the top.
  2. Wrap the springform pan with aluminum foil and place it in a larger roasting pan.
  3. Fill the roasting pan with hot water (about halfway up the cheesecake pan).
  4. Bake at 325°F (163°C) for 60-70 minutes, until the edges are set and the center slightly jiggles.
  5. Turn off the oven, crack the door open, and allow the cheesecake to cool for 1 hour.
  6. Transfer to the refrigerator and chill for at least 4 hours or overnight.

Step 5: Make the Coca-Cola Glaze

  1. In a saucepan, combine Coca-Cola and brown sugar over medium heat.
  2. Bring to a gentle boil and simmer until slightly reduced.
  3. Stir in the cornstarch slurry and cook until thickened.
  4. Remove from heat and let it cool before pouring over the cheesecake.

Step 6: Assemble & Serve

  1. Once the cheesecake is fully chilled, remove it from the springform pan.
  2. Pour the cooled Coca-Cola glaze over the top and spread evenly.
  3. Slice with a warm knife for clean edges and serve!

Notes

  • For extra Coca-Cola flavor, brush a light layer of Coca-Cola reduction over the crust before adding the filling.
  • To prevent cracks, always use a water bath and avoid overmixing the batter.
  • Best served chilled for the creamiest texture.
  • Garnish with whipped cream, chocolate shavings, or caramel drizzle for an extra decadent treat.
