For the Crust:
- 2 cups graham cracker crumbs

For the Cheesecake Filling:
- 24 oz (3 packages) cream cheese, softened
- 1 cup granulated sugar
- 3/4 cup Coca-Cola (to be reduced)
- 2 tsp vanilla extract
- 1/2 cup sour cream
- 3 large eggs
- 1 tbsp cornstarch

- 1 1/2 cups Coca-Cola
- 1/2 cup brown sugar
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
Step 1: Prepare the Coca-Cola Reduction
- Pour 3/4 cup Coca-Cola into a saucepan over medium heat.
- Simmer until the liquid reduces by half to create a thick, concentrated syrup.
- Remove from heat and allow it to cool.
Step 2: Make the Graham Cracker Crust
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, melted butter, and brown sugar in a bowl.
- Press the mixture into the bottom of a greased 9-inch springform pan.
- Bake for 10 minutes, then let it cool.
Step 3: Prepare the Cheesecake Filling
- In a large bowl, beat softened cream cheese until smooth.
- Add sugar and mix until fully incorporated.
- Pour in the Coca-Cola reduction and vanilla extract, mixing well.
- Add sour cream and cornstarch, mixing until just combined.
- Add eggs one at a time, mixing on low speed to avoid overmixing.
Step 4: Assemble & Bake the Cheesecake
- Pour the batter over the crust and smooth the top.
- Wrap the springform pan with aluminum foil and place it in a larger roasting pan.
- Fill the roasting pan with hot water (about halfway up the cheesecake pan).
- Bake at 325°F (163°C) for 60-70 minutes, until the edges are set and the center slightly jiggles.
- Turn off the oven, crack the door open, and allow the cheesecake to cool for 1 hour.
- Transfer to the refrigerator and chill for at least 4 hours or overnight.
Step 5: Make the Coca-Cola Glaze
- In a saucepan, combine Coca-Cola and brown sugar over medium heat.
- Bring to a gentle boil and simmer until slightly reduced.
- Stir in the cornstarch slurry and cook until thickened.
- Remove from heat and let it cool before pouring over the cheesecake.
Step 6: Assemble & Serve
- Once the cheesecake is fully chilled, remove it from the springform pan.
- Pour the cooled Coca-Cola glaze over the top and spread evenly.
- Slice with a warm knife for clean edges and serve!
