  • 1 cup mayonnaise

  • 1 cup chopped celery
  • 1 cup diced bell pepper (any color)

  • 1 cup sweet pickle relish
  • 2 large hard-boiled eggs, chopped
  • ¼ cup fresh parsley, finely chopped (optional)

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
  3. Add the cooled macaroni to the dressing along with celery, bell pepper, red onion, sweet pickle relish, and hard-boiled eggs. Mix gently until well combined.
