For the Sauce:

  • 1 cup diced onion
  • 4 garlic cloves, chopped
  • 1 ½ pounds ground beef
  • 28-ounce can tomato sauce

  • 1 teaspoon garlic powder
  • ¾ cup water

For the Lasagna:

  • 1 pound lasagna noodles
  • 24 ounces ricotta cheese (part-skim or whole)
  • 1 egg, beaten
  • 1 ½ teaspoons kosher salt
  • Black pepper to taste
  • ⅛ teaspoon grated nutmeg (optional)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare the Sauce:
    • Heat olive oil in a large skillet over medium heat.
    • Add onions and cook until softened. Add garlic and cook for 1 minute.
    • Brown the ground beef, drain excess grease, and stir in tomato sauce, seasonings, and water. Simmer for 20 minutes.
  2. Make the Ricotta Mixture:
    • Combine ricotta cheese, beaten egg, kosher salt, pepper, nutmeg, Parmesan, and parsley in a bowl. Mix until smooth.
  3. Cook the Lasagna Noodles:
    • Boil the noodles until al dente or soak in hot water for 30 minutes. Drain and dry.
  4. Assemble the Lasagna:
    • Spread a thin layer of sauce on the bottom of a baking dish.
    • Layer noodles, ricotta mixture, mozzarella cheese, and sauce. Repeat layers and finish with sauce and mozzarella.
  5. Bake:
    • Cover with foil sprayed with cooking spray. Bake at 375°F for 30 minutes.
    • Remove foil and bake for another 15-20 minutes until bubbly and golden.
    • Let rest for 10 minutes before serving.
