  • 1 cup green cabbage, shredded
  • 1 cup red cabbage, shredded
  • ½ cup carrots, shredded
  • ½ cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 8 small corn or flour tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a medium bowl, combine shrimp with salt, pepper, cumin, olive oil, lime juice, lime zest, and minced garlic. Toss well to coat. Marinate for 15-20 minutes.
  2. In another bowl, mix green cabbage, red cabbage, and carrots. In a small bowl, whisk together mayonnaise, apple cider vinegar, and honey until smooth. Pour dressing over cabbage mixture and toss to combine.
  3. Heat a skillet over medium-high heat, add marinated shrimp and cook for 2-3 minutes on each side until pink.
  4. Warm tortillas in a separate skillet for about 30 seconds on each side.
  5. Assemble tacos by layering creamy slaw onto each tortilla followed by cooked shrimp. Garnish with fresh cilantro.
