- 1 tablespoon olive oil
- Juice and zest of 2 limes
- 2 cloves garlic, minced
- 1 cup green cabbage, shredded
- 1 cup red cabbage, shredded
- ½ cup carrots, shredded
- ½ cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 8 small corn or flour tortillas
Instructions
- In a medium bowl, combine shrimp with salt, pepper, cumin, olive oil, lime juice and zest, and garlic. Marinate for 15-20 minutes.
- In another bowl, mix green cabbage, red cabbage, and carrots. In a small bowl, whisk mayonnaise, apple cider vinegar, and honey; combine with the cabbage mixture.
- Heat a large skillet over medium-high heat. Cook marinated shrimp for about 2-3 minutes on each side until pink.
- Warm tortillas in a separate skillet for about 30 seconds on each side.
- Assemble tacos by layering slaw on tortillas followed by shrimp. Garnish with cilantro and serve with lime wedges.
