  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • Juice and zest of 2 limes
  • 2 cloves garlic, minced
  • 1 cup green cabbage, shredded
  • 1 cup red cabbage, shredded
  • ½ cup carrots, shredded
  • ½ cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 8 small corn or flour tortillas

Instructions

  1. In a medium bowl, combine shrimp with salt, pepper, cumin, olive oil, lime juice and zest, and garlic. Marinate for 15-20 minutes.
  2. In another bowl, mix green cabbage, red cabbage, and carrots. In a small bowl, whisk mayonnaise, apple cider vinegar, and honey; combine with the cabbage mixture.
  3. Heat a large skillet over medium-high heat. Cook marinated shrimp for about 2-3 minutes on each side until pink.
  4. Warm tortillas in a separate skillet for about 30 seconds on each side.
  5. Assemble tacos by layering slaw on tortillas followed by shrimp. Garnish with cilantro and serve with lime wedges.
