These chewy, chocolate-packed cookie bars are an easy, one-pan dessert that combines the best of cookies and brownies. With crispy edges, soft centers, and melty chocolate in every bite, they’re perfect for any occasion!
Ingredients
- Flour – 2 cups + 2 tablespoons all-purpose
- Salt – ½ teaspoon Morton kosher salt
- Baking soda – ½ teaspoon
- Butter – 12 tablespoons, melted and cooled
- Brown sugar – 1 cup, packed
- Granulated sugar – ½ cup
- Eggs – 1 whole egg + 1 yolk
- Vanilla extract – 2 teaspoons
- Chocolate chips – 2 cups, plus extra for sprinkling
- Sea salt flakes – Optional, for finishing
Instructions
- Preheat oven to 325°F and line a 9×13-inch baking pan with parchment paper or foil.
- In a medium bowl, whisk together flour, salt, and baking soda. Set aside.
- In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth.
- Add the egg, egg yolk, and vanilla extract. Whisk until combined.
- Using a spatula, fold in dry ingredients. When halfway mixed, add chocolate chips and continue folding just until combined. Do not overmix.
- Press dough evenly into the prepared pan.
- Sprinkle extra chocolate chips on top if desired.
- Bake for about 23 minutes, until the top is golden brown and slightly firm.
- Transfer to a wire rack and sprinkle with flaky sea salt if using.
- Cool completely before slicing into bars.
Notes
- For softer bars, slightly underbake by 1-2 minutes.
- If the dough is sticky, chill it for 10 minutes before pressing into the pan.
- Experiment with different chocolate types or mix-ins like nuts, toffee, or M&Ms.
- Store at room temperature for up to 5 days, in the fridge for 10 days, or freeze for up to 3 months.
