  • 1 medium Onion (diced)
  • 14.5 oz Diced Tomatoes (canned, undrained)

  • 2 Tbsp Taco Seasoning
  • 16 oz Elbow Macaroni
  • 2 cups Cheddar Cheese (shredded)

Instructions

  1. Boil elbow macaroni in salted water until al dente; drain.
  2. In a large skillet over medium heat, cook ground beef and diced onion until beef is browned; drain excess fat.
  3. Stir in diced tomatoes, water, and taco seasoning; simmer for about 5 minutes.
  4. Combine meat mixture with cooked macaroni in a large bowl.
  5. Spread half of the mixture into a greased baking dish, sprinkle with 1 cup of cheddar cheese, then top with remaining mixture.
  6. Cover with foil and bake at 350°F for 30 minutes. Remove foil, add remaining cheese, and bake uncovered for an additional 10 minutes until golden.
