- 4 bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil

- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Instructions
- Season the chicken thighs with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs skin-side down for about 6-7 minutes until golden brown. Flip and cook for another 5-6 minutes. Remove from skillet.
