Ingredients

Scale

For the Chicken:

  • 1 lb chicken tenderloins
  • Salt and pepper, to taste
  • ½ tsp garlic powder
  • 2 tbsp olive oil

For the Garlic Butter Sauce:

  • 1 stick butter (divided)
  • 2 tbsp minced garlic
  • ¼ tsp red pepper flakes
  • ½ tsp salt
  • ½ cup dry white wine

For the Garlic Parmesan Rice:

  • 1½ cups uncooked white rice
  • 3 cups chicken broth
  • 1 tsp salt
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook the Chicken:
    • Season chicken with salt, pepper, and garlic powder.
    • Heat olive oil in a large skillet over medium heat.
    • Sauté chicken until golden and cooked through (3–4 minutes per side). Remove and set aside.
  2. Prepare Garlic Butter Sauce:
    • Melt butter in the skillet. Add garlic, red pepper flakes, and salt. Sauté for 2–3 minutes.
    • Stir in white wine and cook for 5 minutes, reducing by half. Reserve 2 tbsp of sauce for later.
  3. Cook the Rice:
    • Add rice to the skillet, stir to coat with sauce, and cook for 3–4 minutes.
    • Add chicken broth and salt. Bring to a boil, reduce heat, cover, and simmer for 20 minutes.
  4. Final Assembly:
    • Sprinkle Parmesan over the cooked rice.
    • Arrange chicken over rice and drizzle reserved sauce on top.
    • Cover and let stand for 5 minutes.
  5. Serve:
    • Garnish with additional Parmesan and parsley if desired.

Notes

  • Use fresh garlic for the best flavor.
  • Substitute wine with lemon juice and extra broth if needed.
  • Shrimp can replace chicken for a seafood variation.
