  • 1/3 cup coconut milk
  • 3 tablespoons soy sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 4 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 16 skewers
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 2 tablespoons brown sugar
  • 1 tablespoon red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • Chopped roasted peanuts
  • Sliced red chilis
  • Lime wedges
  • Cilantro leaves

Instructions

  1. Marinate chicken in a mixture of coconut milk, soy sauce, red curry paste, fish sauce, brown sugar, garlic, curry powder, salt, and white pepper for at least 1 hour.
  2. Prepare the peanut sauce by heating peanut butter with coconut milk, brown sugar, red curry paste, soy sauce, fish sauce, and lime juice in a saucepan until smooth.
  3. Thread marinated chicken onto skewers and grill over medium-high heat for 3-4 minutes on each side until cooked through.
  4. Serve warm with peanut sauce on the side and garnish with chopped peanuts, sliced chilis, lime wedges, and cilantro.
