- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, chopped
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- Salt and pepper to taste
- 8 ounces egg noodles
- 2 cups fresh spinach (optional)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken breasts and cook until browned on both sides (about 5 minutes). Remove and set aside.
- In the same pot, sauté onion, carrots, and celery for about 5 minutes until softened. Add minced garlic and sauté for another 30 seconds.
- Pour in chicken broth, add thyme, parsley, bay leaf, salt, and pepper. Bring to a boil.
- Shred the cooked chicken using two forks while the broth heats up.
- Once boiling, add egg noodles and shredded chicken to the pot. Reduce heat and simmer for about 8-10 minutes until noodles are tender.
- If using spinach, stir it in now and cook for an additional minute until wilted.
- Remove bay leaf before serving. Ladle soup into bowls and garnish with fresh parsley.
