  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • 2 cups fresh spinach (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken breasts and cook until browned on both sides (about 5 minutes). Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery for about 5 minutes until softened. Add minced garlic and sauté for another 30 seconds.
  3. Pour in chicken broth, add thyme, parsley, bay leaf, salt, and pepper. Bring to a boil.
  4. Shred the cooked chicken using two forks while the broth heats up.
  5. Once boiling, add egg noodles and shredded chicken to the pot. Reduce heat and simmer for about 8-10 minutes until noodles are tender.
  6. If using spinach, stir it in now and cook for an additional minute until wilted.
  7. Remove bay leaf before serving. Ladle soup into bowls and garnish with fresh parsley.
