Ingredients
- 4–5 pounds bone-in chicken thighs (or breasts)
- ⅓ cup olive oil
- ½ cup orange juice
- ¼ cup fresh lime juice
- ¼ cup chopped cilantro
- ½ cup chopped yellow onion
- 3 cloves garlic, diced
- 2 ounces achiote paste
- 1 tablespoon ground cumin
- 1 tablespoon kosher salt
- 1 tablespoon ground coriander
- 2 teaspoons smoked paprika
- 2 teaspoons dried oregano
- 1 teaspoon chipotle chile pepper
Instructions
- In a blender, combine olive oil, orange juice, lime juice, cilantro, onion, garlic, achiote paste, cumin, salt, coriander, smoked paprika, oregano, and chipotle pepper. Blend until smooth.
- Place the chicken in a ziplock bag or airtight container; pour the marinade over it. Seal and coat the chicken evenly.
- Marinate in the refrigerator for at least 4 hours or up to 24 hours for maximum flavor. Let the chicken sit at room temperature for 30 minutes before cooking.
- Preheat your grill to medium-high heat (425–450°F). Grill the chicken for about 5–7 minutes on each side until cooked through (165°F for breasts; 175°F for thighs).
- Remove from heat and let rest for about 5 minutes before slicing and serving.
