  • 45 pounds bone-in chicken thighs (or breasts)
  • ⅓ cup olive oil
  • ½ cup orange juice
  • ¼ cup fresh lime juice
  • ¼ cup chopped cilantro
  • ½ cup chopped yellow onion
  • 3 cloves garlic, diced
  • 2 ounces achiote paste
  • 1 tablespoon ground cumin
  • 1 tablespoon kosher salt
  • 1 tablespoon ground coriander
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon chipotle chile pepper

Instructions

  1. In a blender, combine olive oil, orange juice, lime juice, cilantro, onion, garlic, achiote paste, cumin, salt, coriander, smoked paprika, oregano, and chipotle pepper. Blend until smooth.
  2. Place the chicken in a ziplock bag or airtight container; pour the marinade over it. Seal and coat the chicken evenly.
  3. Marinate in the refrigerator for at least 4 hours or up to 24 hours for maximum flavor. Let the chicken sit at room temperature for 30 minutes before cooking.
  4. Preheat your grill to medium-high heat (425–450°F). Grill the chicken for about 5–7 minutes on each side until cooked through (165°F for breasts; 175°F for thighs).
  5. Remove from heat and let rest for about 5 minutes before slicing and serving.
