  • 2 chicken breasts (sliced into 1-inch strips)
  • 2 bell peppers (red and yellow, sliced)
  • 1 medium onion (sliced)
  • 2 tablespoons fajita seasoning
  • 2 tablespoons olive oil
  • 1 cup shredded cheese (cheddar or blend)
  • Optional toppings: tortillas, sour cream, diced tomatoes, avocado, cilantro, jalapenos

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine 1 tablespoon of fajita seasoning and olive oil. Add the chicken strips and mix until coated.
  3. Transfer the seasoned chicken to a greased casserole dish (9 x 13 inches).
  4. In the same bowl, add remaining seasoning and olive oil to the sliced bell peppers and onions. Mix until coated.
  5. Layer the vegetables over the chicken in the casserole dish and top with shredded cheese.
  6. Bake uncovered for 30–35 minutes until cooked through.
  7. Remove from oven, add fresh cilantro, and serve hot with optional toppings.
