Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 large red bell pepper, thinly sliced
  • 2 cups cooked rice (white or brown)
  • 1 avocado, sliced
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish (optional)

Instructions

  1. 1. Marinate the chicken: In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken and coat well. Let it marinate for at least 30 minutes.

  3. 3. Sauté vegetables: In the same skillet, sauté sliced onions and bell peppers for about 5-7 minutes until tender.
  4. 4. Assemble bowls: Start with a base of cooked rice in each bowl and top with sliced chicken, sautéed veggies, avocado slices, salsa, and cheese.
  5. 5. Serve immediately while warm.
