For the Topping:

  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (optional, for a crispy topping)

Instructions

Step 1: Prepare the Chicken

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Pat the chicken breasts dry and season both sides with salt, pepper, Italian seasoning, and minced garlic.
  3. Place the chicken in the baking dish, spaced evenly.

Step 2: Make the Bruschetta Topping

  1. In a bowl, mix cherry tomatoes, basil, minced garlic, balsamic vinegar, and olive oil.
  2. Stir and let sit for 10 minutes to allow the flavors to blend.

Step 3: Assemble the Bake

  1. Spoon the bruschetta mixture over the chicken.
  2. Sprinkle mozzarella and Parmesan cheese on top.
  3. Add breadcrumbs if using.

Step 4: Bake the Chicken
