  • 1 pound Italian sausage
  • 1 medium onion
  • 2 teaspoons minced garlic
  • 1 red bell pepper
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup chicken broth
  • Olive oil, salt, pepper, and Italian seasoning

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken seasoned with salt and pepper; cook until no longer pink (5-7 minutes) and remove from skillet.
  3. In the same skillet, add sausage, breaking it up as it cooks until browned (about 5 minutes).
  4. Sauté chopped onion and red bell pepper until softened (4-5 minutes), then add minced garlic for an additional 30 seconds.
  5. Return chicken to the skillet; add diced tomatoes, chicken broth, and Italian seasoning. Simmer for about 5 minutes.
  6. Toss in cooked penne until well-coated with sauce; garnish with fresh basil if desired.
