Ideal for family gatherings or cozy weeknight dinners, this gumbo is a one-pot wonder that delivers comfort with every spoonful.

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs
  • 1 pound smoked sausage
  • ½ cup vegetable oil
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 large green bell pepper
  • 2 celery stalks
  • 4 cloves garlic
  • 4 cups chicken broth
  • 2 cups okra
  • Cajun seasoning
  • bay leaves
  • salt and black pepper

Instructions

  1. Make the Roux: In a large pot, heat vegetable oil over medium heat. Gradually add flour while stirring continuously for about 20-30 minutes until it turns deep brown.
  2. Sauté Vegetables: Stir in chopped onion, bell pepper, celery, and garlic; cook for 5-7 minutes until softened.
  3. Brown the Meat: Add sliced sausage; cook for 5 minutes until browned then add chicken until no longer pink.
  4. Build the Gumbo: Mix in diced tomatoes, chicken broth, okra, Cajun seasoning, and bay leaves. Bring to a boil then reduce heat and simmer for 45 minutes to an hour.
  5. Serve: Remove bay leaves before serving over cooked white rice and garnish with parsley and green onions.
