- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon sugar
- ⅓ cup water (80ml)
- 1 tablespoon cornstarch or potato starch
For the Stir-fry:
- 1 tablespoon cooking oil (15ml)
- 6 oz boneless, skinless chicken breast, sliced thin
- ½ onion (white, brown, or yellow), sliced
- 2 cloves garlic, finely chopped
- 1 tablespoon fresh ginger, finely chopped
- 2 spring onions, cut into 1-inch pieces
Instructions
- Prepare the Sauce: Mix oyster sauce, salt, pepper, sugar, water, and cornstarch in a bowl. Set aside.
- Cook the Chicken: Heat oil in a wok over high heat. Stir-fry chicken for 1-2 minutes until no longer pink. Remove from wok.
- Sauté the Aromatics: Add onions, garlic, and ginger to the wok. Cook for 2-3 minutes until fragrant.
- Combine Everything: Return the chicken to the wok, add green onions, and stir-fry for 1-2 minutes.
- Add the Sauce: Pour the sauce into the wok, stirring quickly until thickened.
- Serve Immediately: Enjoy hot with rice or noodles.
Notes
- For extra flavor, marinate the chicken for 10 minutes before cooking.
- Adjust spice levels by adding chili flakes or fresh red chilies.
- For a thicker sauce, add a little more cornstarch slurry.
