Description

These crispy, cheesy mashed potato puffs are a perfect bite-sized appetizer or side dish. Made with creamy mashed potatoes, eggs, and melty cheese, they are baked to golden perfection in a mini muffin tin. Serve them with sour cream or your favorite dipping sauce for an irresistible treat!


Ingredients

  • 2 cups cooked mashed potatoes (chilled)
  • 3 large eggs, beaten
  • 1 cup grated cheese (Parmesan, Gruyère, or your favorite, divided)
  • ¼ cup minced fresh chives
  • ¼ cup diced cooked bacon or ham (optional)
  • Kosher salt and freshly ground black pepper (to taste)
  • Sour cream (for serving, optional)

Instructions

Step 1: Preheat the Oven & Prep the Muffin Tin

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a mini muffin tin with cooking spray or butter.

Step 2: Mix the Ingredients

  1. In a large bowl, combine mashed potatoes, beaten eggs, ¾ cup of the grated cheese, chives, and bacon or ham (if using).
  2. Season with salt and black pepper to taste.
  3. Mix gently until all ingredients are well incorporated.

Step 3: Fill the Muffin Cups

  1. Use a spoon or small scoop to evenly fill each muffin cup with the mashed potato mixture.
  2. Press down lightly to ensure the mixture is packed and holds its shape.
  3. Sprinkle the tops with the remaining ¼ cup of grated cheese.

Step 4: Bake the Puffs

  1. Place the muffin tin in the preheated oven.
  2. Bake for 20 minutes, or until the tops are golden brown and slightly crisp.

Step 5: Cool & Serve

  1. Let the puffs cool in the muffin tin for 5 minutes.
  2. Use a spoon or knife to gently remove them.
  3. Serve immediately with sour cream or your favorite dipping sauce

Notes

  • For extra crispiness, add a light sprinkle of panko breadcrumbs on top before baking.
