  • 1 pound potatoes, peeled and diced
  • 1 cup diced ham
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. In a large pot over medium heat, sauté the onion, carrots, and celery in olive oil for about 5 minutes until softened. Add garlic and cook for another 30 seconds.
  2. Pour in the chicken broth and add potatoes, ham, thyme, salt, and pepper. Bring to a boil then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  3. Blend part of the soup using an immersion blender for a creamier texture or transfer some to a regular blender.
  4. Stir in heavy cream and shredded cheddar cheese until melted and combined.
  5. Serve hot, garnished with chopped parsley.
