Description

This Cheesy Ground Beef Stroganoff Pasta Casserole is a rich, creamy, and comforting dish made with seasoned ground beef, egg noodles, sour cream, and plenty of melted cheddar cheese. It’s easy to prepare and perfect for weeknight dinners or meal prep.


Ingredients

  • 1 lb. ground beef (85% lean)
  • Salt & pepper (to taste)
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 ½ cups beef broth
  • ¾ cup sour cream (room temperature)
  • 1 tsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 cup frozen peas
  • 2 cups cheddar cheese, shredded (divided)
  • 8 oz. egg noodles, uncooked
  • Fresh parsley (for garnish)

Instructions

Prep Work:

  1. Preheat oven to 375°F.
  2. Measure out all ingredients.
  3. Place sour cream near the stove to warm slightly.

Cook the Beef & Sauce:

  1. Heat a large skillet over medium-high heat. Brown ground beef with salt and pepper for 5 minutes.
  2. Add onions and cook until soft. Stir in garlic and cook for 1-2 minutes.
  3. Melt butter in the pan, then sprinkle in flour and cook for 2 minutes, stirring constantly.
  4. Gradually pour in beef broth, stirring to avoid lumps. Simmer for 5 minutes.
  5. Reduce heat to low, then add sour cream, Worcestershire sauce, Dijon mustard, and frozen peas. Stir well.

Cook the Pasta & Assemble the Casserole:

  1. Boil egg noodles for 1 minute less than al dente. Drain.
  2. Stir noodles into the sauce.
  3. Transfer mixture to a 9×13-inch greased casserole dish.
  4. Sprinkle with remaining cheese.

Bake & Serve:

  1. Cover with foil and bake for 20 minutes.
  2. Remove foil and bake for another 5 minutes to brown the cheese.
  3. Let rest for 5 minutes before serving. Garnish with parsley.

Notes

  • For extra flavor, add sautéed mushrooms.
  • Use freshly shredded cheese for better melting.
  • Sub Greek yogurt for sour cream for a lighter version.
