For the Filling
- ½ tablespoon olive oil
- 1 pound ground beef (extra lean or regular)
- 1 teaspoon chili powder
- 1 teaspoon ground chipotle chili pepper
- ½ teaspoon dried oregano
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon ground cayenne pepper (optional)
- 1 tablespoon tomato paste
- 2 tablespoons unsalted beef stock or broth (low-sodium or regular)
For the Wraps
- 12 ounces shredded cheese blend (about 3 cups: cheddar, Monterey Jack, mozzarella)
- 6 flour tortillas (7–8 inches in diameter)
- 2 tablespoons vegetable oil (for greasing the pan)

Instructions
- Preheat Oven
- Preheat your oven to 200°F to keep wraps warm while cooking in batches.
- Cook Ground Beef
- Heat ½ tablespoon olive oil in a large non-stick frying pan over medium heat.
- Add ground beef, breaking it into small pieces.
- Stir in chili powder, chipotle chili pepper, oregano, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Cook until beef is browned and fully cooked, about 8–10 minutes.
- Stir in tomato paste and beef stock. Cook for an additional 1–2 minutes, then remove beef from the pan. Drain any excess grease if necessary.
- Assemble the Wraps
- Lay tortillas on a clean surface.
- Distribute 8 ounces (2 cups) of shredded cheese evenly on one side of each tortilla.
- Add cooked ground beef on top of the cheese layer.
- Sprinkle the remaining 4 ounces (1 cup) of shredded cheese on top of the beef.
- Fold each tortilla in half to form a half-moon shape.
- Cook the Wraps
- Heat 2 teaspoons of vegetable oil in the same non-stick frying pan over medium-low heat.
- Place two wraps in the pan and cook for about 2 minutes on one side, until golden and crispy.
- Flip carefully and cook for another 2 minutes on the other side.
- Transfer cooked wraps to a baking sheet and place them in the preheated oven to keep warm.
- Repeat with the remaining wraps, adding more oil to the pan as needed.
- Serve and Enjoy
- Once all wraps are cooked, cut each one in half to create 12 pieces.
- Serve warm with optional toppings like salsa, guacamole, or sour cream.

- To make the recipe healthier, use whole-grain tortillas, low-fat cheese, or ground turkey instead of beef.
