  • 1 medium onion (diced)
  • 810 cloves garlic (minced)
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme

  • 1 cup mozzarella cheese (shredded)
  • 3/4 cup Parmesan cheese (grated)

Instructions

  2. Scrub and thinly slice the Yukon Gold potatoes.
  3. In a medium saucepan, melt butter over medium heat. Add diced onion and minced garlic; sauté until soft.
  4. Stir in flour to create a roux, then gradually add milk and chicken broth while stirring continuously. Add thyme and salt; bring to a gentle boil until slightly thickened.
  5. Remove from heat and mix in the shredded cheeses until well combined.
