Ingredients

Scale

Ingredients:

  • 2 cups cooked white rice
  • 3 cups chopped fresh or frozen broccoli
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • ½ cup milk
  • ¼ cup melted butter
  • Salt and pepper to taste

Optional:

  • 1 cup cooked chicken or ham (optional)
  • ½ teaspoon garlic powder or paprika

Instructions

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. If using fresh broccoli, steam or blanch it until tender yet crisp. If using frozen broccoli, thaw and pat it dry.
  3. Cook rice according to package instructions and let it cool slightly.
  4. In a large mixing bowl, whisk together the condensed cream of mushroom soup, milk, melted butter, salt, and pepper. Add garlic powder or paprika, if desired.
  5. Stir in the cooked rice, broccoli, and 1 cup of shredded cheese. Mix until evenly combined.
  6. Grease a 9×13-inch baking dish and transfer the mixture into it. Spread evenly.
  7. Sprinkle the remaining 1 cup of shredded cheese on top.
  8. Optional: Add a crunchy topping like crushed crackers, breadcrumbs, or French-fried onions.
  9. Bake for 25–30 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for 5 minutes before serving.

Notes

Notes:

  • To make it gluten-free, use a gluten-free condensed soup.
  • Swap white rice with brown rice or quinoa for a healthier alternative.
  • Add protein like cooked chicken, turkey, or ham for a complete meal.
  • For a vegan version, use plant-based cheese, butter, and cream of mushroom soup.
