Instructions
- Preheat your oven to 350°F (175°C).
- Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into a 9-inch springform pan.
- Bake the crust for 10 minutes; let it cool.
- Beat cream cheese until smooth; add sugar, salt, vanilla extract, and lemon juice until combined.
- Add eggs one at a time and mix until smooth; then fold in sour cream.
- Pour filling into the cooled crust and bake for 45 minutes (15 minutes at 350°F then reduce to 300°F).
- Turn off the oven and leave the cheesecake inside for an hour before cooling completely at room temperature.
- Chill in the refrigerator for at least six hours before serving.
