  • ¼ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 (8-ounce) blocks cream cheese
  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon juice
  • 3 large eggs
  • ½ cup sour cream
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into a 9-inch springform pan.
  3. Bake the crust for 10 minutes; let it cool.
  4. Beat cream cheese until smooth; add sugar, salt, vanilla extract, and lemon juice until combined.
  5. Add eggs one at a time and mix until smooth; then fold in sour cream.
  6. Pour filling into the cooled crust and bake for 45 minutes (15 minutes at 350°F then reduce to 300°F).
  7. Turn off the oven and leave the cheesecake inside for an hour before cooling completely at room temperature.
  8. Chill in the refrigerator for at least six hours before serving.
