Description

These cheesecake brownies are the perfect combination of fudgy chocolate brownies and creamy cheesecake. Easy to make and incredibly delicious, they are a show-stopping dessert for any occasion!

For the Cheesecake Batter:

  • 1 package (250g) cream cheese, softened
  • ⅓ cup (65g) granulated sugar
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 large egg, at room temperature

For the Brownie Batter:

  • 5 oz (142g) bittersweet chocolate (70% cocoa), coarsely chopped
  • 6 tablespoons (84g) unsalted butter
  • 2 large eggs, at room temperature
  • ¾ cup (150g) granulated sugar
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • ⅓ cup (50g) all-purpose flour
  • 1 tablespoon (6g) cocoa powder

Instructions

1. Preparing the Pan

  1. Preheat oven to 350°F (175°C).
  2. Line a 9×9-inch or 8×8-inch baking pan with parchment paper.

2. Making the Cheesecake Batter

  1. Beat the cream cheese until smooth.
  2. Add sugar and vanilla extract, mix until glossy.
  3. Beat in egg until incorporated. Set aside.

3. Making the Brownie Batter

  1. Melt chocolate and butter over low heat or in the microwave. Let cool slightly.
  2. Whisk together eggs, sugar, and salt until thick.
  3. Stir in melted chocolate mixture.
  4. Fold in flour and cocoa powder until just combined.
  5. Reserve ⅓ cup of brownie batter for swirling.

4. Assembling the Brownies

  1. Spread brownie batter into the prepared pan.
  2. Pour cheesecake batter over it.
  3. Dollop teaspoons of reserved brownie batter on top.
  4. Swirl with a knife to create a marbled effect.

5. Baking

  1. Bake at 350°F for 10 minutes, then reduce to 325°F and bake for 15-20 minutes more.
  2. Cool completely, then refrigerate for at least 1 hour before slicing.
