For the Cheesecake Batter:
- 1 package (250g) cream cheese, softened
- ⅓ cup (65g) granulated sugar
- 1 teaspoon (5ml) pure vanilla extract
- 1 large egg, at room temperature
For the Brownie Batter:
- 5 oz (142g) bittersweet chocolate (70% cocoa), coarsely chopped
- 6 tablespoons (84g) unsalted butter
- 2 large eggs, at room temperature
- ¾ cup (150g) granulated sugar
- ½ teaspoon pure vanilla extract
- ¼ teaspoon salt
- ⅓ cup (50g) all-purpose flour
- 1 tablespoon (6g) cocoa powder
Instructions
1. Preparing the Pan
- Preheat oven to 350°F (175°C).
- Line a 9×9-inch or 8×8-inch baking pan with parchment paper.
2. Making the Cheesecake Batter
- Beat the cream cheese until smooth.
- Add sugar and vanilla extract, mix until glossy.
- Beat in egg until incorporated. Set aside.
3. Making the Brownie Batter
- Melt chocolate and butter over low heat or in the microwave. Let cool slightly.
- Whisk together eggs, sugar, and salt until thick.
- Stir in melted chocolate mixture.
- Fold in flour and cocoa powder until just combined.
- Reserve ⅓ cup of brownie batter for swirling.
4. Assembling the Brownies
- Spread brownie batter into the prepared pan.
- Pour cheesecake batter over it.
- Dollop teaspoons of reserved brownie batter on top.
- Swirl with a knife to create a marbled effect.
5. Baking
- Bake at 350°F for 10 minutes, then reduce to 325°F and bake for 15-20 minutes more.
- Cool completely, then refrigerate for at least 1 hour before slicing.
