  • 1/8 teaspoon ground cardamom
  • 1/2 cup whole milk
  • 1/2 cup sour cream (or plain yogurt)
  • 1/4 cup flavorless oil (or 1/2 stick melted butter)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberry jam
  • 1 cup confectioner's sugar
  • 1/8 teaspoon ground cardamom (for glaze)
  • 1/2 cup finely crushed freeze-dried blueberries or 2 tablespoons blueberry jam
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together dry ingredients: flour, brown sugar, salt, baking powder, and cardamom.
  3. In another bowl, mix wet ingredients: milk, sour cream, oil (or melted butter), eggs, and vanilla until well combined.
  4. Pour wet mixture into dry ingredients and stir gently until just combined.
  5. Spoon half of the batter into muffin cups. Add about one tablespoon of blueberry jam on top before covering with remaining batter.
  6. Bake for approximately 18 minutes or until golden brown and a toothpick comes out clean.
  7. Cool slightly before glazing with a mixture of confectioner's sugar, ground cardamom, crushed freeze-dried blueberries (or blueberry jam), and milk.
