Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup light brown sugar
- 1 teaspoon kosher salt
- 1 1/2 teaspoons baking powder
- 1/8 teaspoon ground cardamom
- 1/2 cup whole milk
- 1/2 cup sour cream (or plain yogurt)
- 1/4 cup flavorless oil (or 1/2 stick melted butter)
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup blueberry jam
- 1 cup confectioner's sugar
- 1/8 teaspoon ground cardamom (for glaze)
- 1/2 cup finely crushed freeze-dried blueberries or 2 tablespoons blueberry jam
- 1–2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, whisk together dry ingredients: flour, brown sugar, salt, baking powder, and cardamom.
- In another bowl, mix wet ingredients: milk, sour cream, oil (or melted butter), eggs, and vanilla until well combined.
- Pour wet mixture into dry ingredients and stir gently until just combined.
- Spoon half of the batter into muffin cups. Add about one tablespoon of blueberry jam on top before covering with remaining batter.
- Bake for approximately 18 minutes or until golden brown and a toothpick comes out clean.
- Cool slightly before glazing with a mixture of confectioner's sugar, ground cardamom, crushed freeze-dried blueberries (or blueberry jam), and milk.
