For the Toppings
- 3 small yellow onions, thinly sliced

- 8 oz button mushrooms, sliced
- 1/4 tsp dried thyme
- 1 cup shredded mozzarella
- Fresh parsley (optional)
For the White Sauce
- 1 tbsp butter
- 1 clove garlic, minced
- 4 oz cream cheese
- 1/2 cup milk
- 1/4 tsp salt
Instructions
Prepare the Dough (Night Before)
- In a mixing bowl, combine flour, salt, and yeast.
- Gradually add warm water, stirring until a sticky dough forms.
- Cover loosely and let rise 12-18 hours at room temperature.
2. Caramelize the Onions
- Heat olive oil in a skillet over medium-low heat.
- Add sliced onions, stir to coat, and season with a pinch of salt & pepper.
- Cook for 40-45 minutes, stirring every few minutes, until golden brown and jam-like.
3. Sauté the Mushrooms
- Remove onions and add mushrooms to the same skillet.
- Season with salt, pepper, and thyme.
- Cook over medium heat for 10 minutes until golden brown and all moisture evaporates.
4. Make the White Sauce
- In a small saucepan, melt butter over medium heat.
- Add garlic and sauté until fragrant (about 2 minutes).
- Stir in cream cheese, breaking it down with a whisk.
- Gradually add milk and salt, whisking until smooth.
5. Prepare the Dough for Baking
- Preheat oven to 500°F (260°C).
- Sprinkle a surface with flour and gently stretch dough into a 10-inch circle.
- Transfer to a pizza pan or baking sheet.
6. Assemble the Pizza
- Spread white sauce evenly over the dough.
- Add caramelized onions, then sautéed mushrooms.
- Sprinkle shredded mozzarella on top.
7. Bake the Pizza
- Place in the preheated oven and bake for 12-15 minutes.
- Remove and let rest for 5 minutes before slicing.
8. Garnish & Serve
- Sprinkle with fresh parsley, if desired.
