For the Dough

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/4 tsp instant yeast
  • 3/4 cup warm water

For the Toppings

  • 3 small yellow onions, thinly sliced
  • 2 tbsp olive oil
  • Pinch of salt & pepper
  • 8 oz button mushrooms, sliced
  • 1/4 tsp dried thyme
  • 1 cup shredded mozzarella
  • Fresh parsley (optional)

For the White Sauce

  • 1 tbsp butter
  • 1 clove garlic, minced
  • 4 oz cream cheese
  • 1/2 cup milk
  • 1/4 tsp salt

Instructions

Prepare the Dough (Night Before)

  1. In a mixing bowl, combine flour, salt, and yeast.
  2. Gradually add warm water, stirring until a sticky dough forms.
  3. Cover loosely and let rise 12-18 hours at room temperature.

2. Caramelize the Onions

  1. Heat olive oil in a skillet over medium-low heat.
  2. Add sliced onions, stir to coat, and season with a pinch of salt & pepper.
  3. Cook for 40-45 minutes, stirring every few minutes, until golden brown and jam-like.

3. Sauté the Mushrooms

  1. Remove onions and add mushrooms to the same skillet.
  2. Season with salt, pepper, and thyme.
  3. Cook over medium heat for 10 minutes until golden brown and all moisture evaporates.

4. Make the White Sauce

  1. In a small saucepan, melt butter over medium heat.
  2. Add garlic and sauté until fragrant (about 2 minutes).
  3. Stir in cream cheese, breaking it down with a whisk.
  4. Gradually add milk and salt, whisking until smooth.

5. Prepare the Dough for Baking

  1. Preheat oven to 500°F (260°C).
  2. Sprinkle a surface with flour and gently stretch dough into a 10-inch circle.
  3. Transfer to a pizza pan or baking sheet.

6. Assemble the Pizza

  1. Spread white sauce evenly over the dough.
  2. Add caramelized onions, then sautéed mushrooms.
  3. Sprinkle shredded mozzarella on top.

7. Bake the Pizza

  1. Place in the preheated oven and bake for 12-15 minutes.
  2. Remove and let rest for 5 minutes before slicing.

8. Garnish & Serve

  • Sprinkle with fresh parsley, if desired.
