  • 1/4 cup granulated sugar (for caramelizing)

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg. In another bowl, mix milk, eggs, vanilla extract, and melted butter. Combine wet and dry ingredients until just mixed.
  2. Heat oil to 350°F (175°C) in a deep fryer or heavy pot. Fry spoonfuls of batter for 2-3 minutes on each side until golden brown. Cool on paper towels.
  3. For the custard, warm heavy cream and vanilla in a saucepan. Whisk egg yolks with brown sugar until smooth; gradually add cream mixture while whisking continuously. Return to heat until thickened.
  4. Use a piping bag to fill cooled donuts with custard.
  5. Caramelize sugar using a kitchen torch or broiler until it forms a crispy crust on each filled donut.
