For Pancakes:

  • 1 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 2 tbsp granulated sugar
  • 1 large egg
  • 1 ¼ cups milk
  • 1 tsp vanilla extract
  • 2 tbsp melted butter

For Caramelized Bananas:

  • 2 ripe bananas, sliced diagonally
  • 2 tbsp unsalted butter
  • 3 tbsp brown sugar
  • ¼ tsp cinnamon

For Toppings:

  • Maple syrup or homemade caramel sauce
  • Whipped cream (optional)
  • Chopped nuts (pecans or walnuts)

Instructions

Step 1: Prepare the Pancake Batter

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. In another bowl, whisk together egg, milk, vanilla extract, and melted butter.
  3. Slowly combine the wet and dry ingredients, stirring until just mixed. A few lumps are fine!
  4. Let the batter rest for 5–10 minutes for fluffier pancakes.

Step 2: Cook the Pancakes

  1. Heat a non-stick pan or griddle over medium heat and lightly grease with butter.
  2. Pour ¼ cup of batter per pancake onto the skillet.
  3. Cook until bubbles form on the surface (about 2 minutes), then flip and cook for another 1–2 minutes until golden brown.
  4. Transfer to a plate and cover to keep warm.

Step 3: Caramelize the Bananas

  1. In a pan, melt 2 tbsp butter over medium heat.
  2. Stir in brown sugar and cinnamon until combined.
  3. Add sliced bananas and cook for 1–2 minutes per side, until caramelized and golden brown.
  4. Remove from heat and set aside.

Step 4: Assemble the Pancake Stack

  1. Layer pancakes with caramelized bananas in between each one.
  2. Drizzle with maple syrup or caramel sauce.
  3. Top with whipped cream and chopped nuts, if desired.
  4. Serve immediately and enjoy!

  • For fluffier pancakes, avoid overmixing the batter.
