For Pancakes:
- 1 ½ cups all-purpose flour
- 1 tbsp baking powder
- ¼ tsp salt
- 2 tbsp granulated sugar
- 1 large egg
- 1 ¼ cups milk
- 1 tsp vanilla extract

For Caramelized Bananas:
- 2 ripe bananas, sliced diagonally
- 2 tbsp unsalted butter
- 3 tbsp brown sugar
- ¼ tsp cinnamon
For Toppings:
- Maple syrup or homemade caramel sauce
- Whipped cream (optional)
- Chopped nuts (pecans or walnuts)
Instructions
Step 1: Prepare the Pancake Batter
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, whisk together egg, milk, vanilla extract, and melted butter.
- Slowly combine the wet and dry ingredients, stirring until just mixed. A few lumps are fine!
- Let the batter rest for 5–10 minutes for fluffier pancakes.
Step 2: Cook the Pancakes
- Heat a non-stick pan or griddle over medium heat and lightly grease with butter.
- Pour ¼ cup of batter per pancake onto the skillet.
- Cook until bubbles form on the surface (about 2 minutes), then flip and cook for another 1–2 minutes until golden brown.
- Transfer to a plate and cover to keep warm.
Step 3: Caramelize the Bananas
- In a pan, melt 2 tbsp butter over medium heat.
- Stir in brown sugar and cinnamon until combined.
- Add sliced bananas and cook for 1–2 minutes per side, until caramelized and golden brown.
- Remove from heat and set aside.
Step 4: Assemble the Pancake Stack
- Layer pancakes with caramelized bananas in between each one.
- Drizzle with maple syrup or caramel sauce.
- Top with whipped cream and chopped nuts, if desired.
- Serve immediately and enjoy!
