- For the Steak Bites:
- 1 lb sirloin steak, cut into bite-sized pieces
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp black pepper
- ½ tsp salt
- For the Garlic Herb Potatoes:
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- ½ tsp garlic powder
- Salt and pepper to taste

- Season steak bites with paprika, garlic powder, salt, and pepper. Let rest for 10 minutes.
- Heat a cast iron skillet over medium-high heat. Add butter and sear steak bites in batches until golden brown. Remove and set aside.
- In the same skillet, add olive oil and potatoes. Cook on medium heat until golden and crispy, stirring occasionally.
- Add garlic, rosemary, and thyme during the last 2 minutes of cooking.
- Return steak bites to the skillet, toss with the potatoes, and heat through. Serve immediately.
