- 2 cloves garlic, minced.
- ½ cup torn fresh basil, plus extra for garnish.
- 1 tablespoon balsamic vinegar.
- Kosher salt and freshly ground black pepper (to taste).
Chicken & Pasta:
- ½ pound Angel Hair Pasta (half of a 16-ounce box).
- 1–1½ pounds boneless, skinless chicken breasts (about 2).
- 1–2 tablespoons olive oil or butter.
- Optional toppings: balsamic glaze, Parmesan, or Mozzarella.
Instructions
- Make the Bruschetta: Combine diced tomatoes, minced garlic, torn basil, and balsamic vinegar in a bowl. Season with salt and pepper, and let it marinate while preparing the pasta and chicken.
- Cook the Pasta: Bring salted water to a boil, cook the pasta until al dente, drain, and toss with olive oil.
- Cook the Chicken: Heat olive oil in a skillet, season the chicken, and cook until golden and cooked through. Let it rest before slicing.
- Combine: Heat the bruschetta mixture in the skillet, add the pasta, and toss to coat. Add sliced chicken and toss again.
- Serve: Garnish with fresh basil, balsamic glaze, and optional cheese
Notes
- Cheese Options: Add freshly grated Parmesan or shredded Mozzarella for extra flavor.
- Dairy-Free: Skip the cheese or use a plant-based alternative.
- Low-Carb Option: Substitute the pasta with zucchini noodles or spaghetti squash.
- Make Ahead: Prepare the bruschetta topping and chicken in advance, then cook the pasta fresh before serving.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days.
- Reheating: Reheat gently on the stovetop with a splash of olive oil or chicken broth to keep the pasta moist.
- Freezing: Freeze pasta and chicken (without bruschetta topping) for up to 2 months.
