Description

A light yet indulgent fusion of Italian-inspired bruschetta and hearty chicken pasta. Perfect for weeknight dinners or special occasions.

Ingredients

Scale

Bruschetta:

  • 1 pound Roma tomatoes (about 6), seeded and diced.
  • 2 cloves garlic, minced.
  • ½ cup torn fresh basil, plus extra for garnish.
  • 1 tablespoon balsamic vinegar.
  • Kosher salt and freshly ground black pepper (to taste).

Chicken & Pasta:

  • ½ pound Angel Hair Pasta (half of a 16-ounce box).
  • 1 pounds boneless, skinless chicken breasts (about 2).
  • 12 tablespoons olive oil or butter.
  • Optional toppings: balsamic glaze, Parmesan, or Mozzarella.

Instructions

  • Make the Bruschetta: Combine diced tomatoes, minced garlic, torn basil, and balsamic vinegar in a bowl. Season with salt and pepper, and let it marinate while preparing the pasta and chicken.
  • Cook the Pasta: Bring salted water to a boil, cook the pasta until al dente, drain, and toss with olive oil.
  • Cook the Chicken: Heat olive oil in a skillet, season the chicken, and cook until golden and cooked through. Let it rest before slicing.
  • Combine: Heat the bruschetta mixture in the skillet, add the pasta, and toss to coat. Add sliced chicken and toss again.
  • Serve: Garnish with fresh basil, balsamic glaze, and optional cheese

Notes

  • Cheese Options: Add freshly grated Parmesan or shredded Mozzarella for extra flavor.
  • Dairy-Free: Skip the cheese or use a plant-based alternative.
  • Low-Carb Option: Substitute the pasta with zucchini noodles or spaghetti squash.
  • Make Ahead: Prepare the bruschetta topping and chicken in advance, then cook the pasta fresh before serving.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheating: Reheat gently on the stovetop with a splash of olive oil or chicken broth to keep the pasta moist.
  • Freezing: Freeze pasta and chicken (without bruschetta topping) for up to 2 months.
