  • 2 cups butternut squash, peeled and diced
  • 4 tablespoons unsalted butter
  • 10 fresh sage leaves
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden and tender.
  2. In a large pot, boil salted water and cook orzo according to package instructions until al dente. Drain and reserve ½ cup of cooking water.
  3. In a skillet over medium heat, melt the butter until golden brown and nutty-smelling (4-5 minutes). Remove from heat.
  4. Add sage leaves to browned butter and sauté until crispy (1-2 minutes).
  5. Combine roasted squash with the pasta and brown butter in the skillet. Stir well and add reserved pasta water if needed for creaminess.
  6. Mix in grated Parmesan until melted and season to taste.
