Ingredients

Scale

For the Chicken Cutlets:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon milk
  • 1 ½ cups Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese

For Frying:

  • 1 cup vegetable oil (or olive oil)

For Garnish:

  • ¼ cup fresh parsley, finely chopped
  • Extra Parmesan cheese for topping

Instructions

  1. Prepare the Chicken:

    • Place the chicken breasts on a cutting board and pound them to about ¼-inch thickness using a meat mallet.
    • Season both sides with salt, pepper, and garlic powder.
  2. Set Up the Breading Station:

    • In one shallow dish, place the flour.
    • In another dish, whisk together the eggs and milk.
    • In a third dish, mix the breadcrumbs, Parmesan, paprika, and oregano.
  3. Bread the Cutlets:

    • Dredge each chicken breast in the flour, shaking off excess.
    • Dip into the egg wash, ensuring full coverage.
    • Press into the breadcrumb mixture, coating both sides evenly.
  4. Fry the Cutlets:

    • Heat oil in a large frying pan over medium heat to 350°F.
    • Fry the cutlets for 3-4 minutes per side until golden brown.
    • Transfer to a paper towel-lined plate to drain excess oil.
  5. Melt the Cheese:

    • Preheat the oven to 375°F.
    • Place fried cutlets on a baking sheet and top each with shredded mozzarella cheese.
    • Bake for 5-7 minutes until the cheese is melted and bubbly.
  6. Garnish & Serve:

    • Sprinkle fresh parsley and extra Parmesan over the cutlets.
    • Serve hot with your favorite sides.

Notes

  • For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs.
  • If baking instead of frying, bake at 400°F for 20-25 minutes.
  • Air fryer option: Cook at 375°F for 12-15 minutes, flipping halfway.
