For the Cupcakes
- 12 tbsp unsalted butter, softened
- 1 cup sugar
- 2 tsp vanilla extract
- 3 large eggs
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ⅔ cup buttermilk
For the Custard Filling
- 3 egg yolks
- 3 cups milk
- ½ cup sugar
- ⅓ cup cornstarch
- ¼ tsp salt
- 1 tsp vanilla extract
For the Chocolate Ganache
- 8 oz semi-sweet baking chocolate, finely chopped
- 1 cup heavy cream
Instructions
Make the Cupcakes
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Add vanilla extract and mix well.
- Beat in eggs, one at a time, ensuring each is fully incorporated before adding the next.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Alternate adding the flour mixture and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
- Fill cupcake liners ¾ full with batter.
- Bake for 18-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cupcakes cool completely before filling.
Prepare the Custard Filling
- In a medium bowl, whisk egg yolks. Gradually stir in milk.
- In a saucepan, mix sugar, cornstarch, and salt.
- Slowly add the milk mixture, stirring constantly to prevent lumps.
- Cook over medium-low heat, stirring frequently until thickened and gently boiling (~20 minutes).
- Remove from heat, stir in vanilla extract.
- Cover custard with plastic wrap pressed directly onto the surface to prevent a skin from forming. Chill in the refrigerator until ready to use.
Make the Ganache
- Place chopped chocolate in a heatproof bowl.
- Heat heavy cream in a small saucepan over medium heat until it begins to steam (do not boil).
- Pour hot cream over chocolate and let sit for 1-2 minutes.
- Whisk until smooth and shiny.
- Let ganache cool slightly until thick but still pourable.
Assemble the Cupcakes
- Use a knife or cupcake corer to remove a small portion from the center of each cupcake.
- Fill a piping bag with the custard and pipe it into the hollowed-out cupcakes.
- Dip the tops of the cupcakes into the ganache, allowing excess to drip off.
- Let the ganache set for 30-60 minutes before serving.
Notes
- For best texture, use room-temperature ingredients when making the cupcakes.
- Make ahead: Cupcakes, custard, and ganache can be prepared a day in advance and stored separately before assembling.
- Storage: Refrigerate in an airtight container for up to 3 days. Allow to sit at room temperature before serving.
