  • 1 lb. dried navy beans
  • 1/2 lb. salt pork (or diced bacon)
  • 2/3 cup molasses
  • 1/4 cup brown sugar
  • 1 large yellow onion, diced
  • Kosher salt
  • Dijon mustard
  • black pepper

Instructions

  1. Soak the beans overnight in cold water with 1 tablespoon of kosher salt.
  2. Simmer soaked beans in the same water for 30–45 minutes until tender; reserve liquid.
  3. Preheat oven to 250°F.
  4. Score and sear salt pork in a Dutch oven until golden brown; place at the bottom of the pot.
  5. Layer beans around and on top of the salt pork, adding diced onion.
  6. In a bowl, mix molasses, brown sugar, mustard, salt, and pepper; pour over beans and add reserved liquid until covered.
  7. Cover and bake for 6-8 hours, checking every hour to stir and maintain moisture.
