  • 2 1/2 cups peeled and sliced peaches (about 56 peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 3/4 cup granulated sugar (divided)
  • 3/4 cup all-purpose flour (divided)
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter, diced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, 1/2 cup granulated sugar, and 1/4 cup flour. Toss gently and let sit.
  3. In another bowl, combine the remaining flour (1/2 cup), oats, brown sugar, remaining granulated sugar (1/4 cup), salt, and cinnamon. Add cold butter and mix until crumbly.
