  • 1 sheet puff pastry
  • 50 g sugar
  • 20 g cornstarch
  • 15 g all-purpose flour
  • 250 ml milk
  • 3 egg yolks
  • 1 tsp vanilla extract
  • Fresh blueberries for topping
  • 1 egg yolk mixed with 1 tbsp milk (for brushing)

Instructions

  1. Preheat your oven to 190°C (374°F) and line a baking sheet with parchment paper.
  2. Cut rings from the puff pastry using a pastry cutter. For half the rings, cut smaller holes in the center and place them atop whole rings, pressing gently to secure.
  3. Arrange on the baking sheet and brush with an egg yolk and milk mixture. Bake for about 20 minutes until golden brown. Cool completely.
  4. To make the vanilla cream, heat most of the milk in a saucepan. In a bowl, whisk together remaining milk with egg yolks, sugar, cornstarch, and salt. Gradually add hot milk while stirring.
  5. Return to medium heat and cook until thickened. Stir in vanilla extract and butter; cool before filling the pastries.
  6. Spoon vanilla cream into each cooled pastry ring, top with fresh blueberries, and dust with powdered sugar before serving.
