  • 1 cup cherry tomatoes
  • 1/4 small red onion (optional)
  • 1/4 french baguette (for croutons)
  • 2 tablespoons butter
  • 6 strips bacon
  • 1 lb chicken breasts
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 tablespoon maple syrup
  • 4 teaspoons whole grain mustard
  • 1 tablespoon lemon juice (freshly squeezed)
  • Salt to taste
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Slice the romaine and halved cherry tomatoes; place them on four plates.
