  • 3 cups fresh blackberries
  • Juice of ½ lime
  • 1 cup granulated sugar (divided)
  • 2 cups all-purpose flour
  • 1 cup (2 sticks) cold unsalted butter

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare an 8-inch round cake pan by greasing it.
  2. In a bowl, combine blackberries, lime juice, ½ cup sugar, cinnamon, salt, and cornstarch. Let sit.
  3. In another bowl, whisk together flour, remaining sugar, and salt. Cut in cold butter until crumbly.
  4. Press half of the mixture into the bottom of the pan. Add blackberry mixture on top and crumble remaining shortbread over it.
  5. Bake for 30-35 minutes until golden brown. Cool completely before slicing.
