Ingredients
- 3 cups fresh blackberries
- Juice of ½ lime
- 1 cup granulated sugar (divided)
- 2 cups all-purpose flour
- 1 cup (2 sticks) cold unsalted butter
Instructions
- Preheat the oven to 375°F (190°C). Prepare an 8-inch round cake pan by greasing it.
- In a bowl, combine blackberries, lime juice, ½ cup sugar, cinnamon, salt, and cornstarch. Let sit.
- In another bowl, whisk together flour, remaining sugar, and salt. Cut in cold butter until crumbly.
- Press half of the mixture into the bottom of the pan. Add blackberry mixture on top and crumble remaining shortbread over it.
- Bake for 30-35 minutes until golden brown. Cool completely before slicing.
