  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Season beef cubes with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef in batches on all sides, then set aside.
  2. In the same pot, sauté chopped onion until translucent. Add minced garlic and cook for another minute.
  3. Return browned beef to the pot along with carrots, potatoes, and peas. Stir in beef broth, tomato paste, thyme, bay leaves, and Worcestershire sauce until well combined.
  4. Bring to a boil, reduce heat to low, cover and let simmer for 1.5 to 2 hours until the beef is tender.
  5. Remove bay leaves before serving hot and garnish with fresh parsley.
