Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 cup frozen peas
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
Instructions
- Season beef cubes with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef in batches on all sides, then set aside.
- In the same pot, sauté chopped onion until translucent. Add minced garlic and cook for another minute.
- Return browned beef to the pot along with carrots, potatoes, and peas. Stir in beef broth, tomato paste, thyme, bay leaves, and Worcestershire sauce until well combined.
- Bring to a boil, reduce heat to low, cover and let simmer for 1.5 to 2 hours until the beef is tender.
- Remove bay leaves before serving hot and garnish with fresh parsley.
