Ingredients

Scale

For the Banana Bread Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 23 bananas)
  • ½ cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Optional Toppings:

  • Chopped walnuts or pecans
  • Caramel drizzle
  • Banana slices

Instructions

Making the Banana Bread Cake:

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix dry ingredients. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. Prepare wet ingredients. In another bowl, beat melted butter and brown sugar. Add eggs, then mashed bananas, sour cream, and vanilla extract.
  4. Combine wet and dry ingredients. Stir gently until just combined. Avoid overmixing.
  5. Bake. Pour batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Making the Cream Cheese Frosting:

  1. Beat cream cheese and butter. In a bowl, mix softened cream cheese and butter until smooth.
  2. Add powdered sugar. Gradually mix in the sugar until light and fluffy.
  3. Mix in vanilla extract. Blend until fully incorporated.

Frosting & Serving:

  1. Ensure the cake is completely cool.
  2. Spread frosting evenly over the cake using a spatula.
  3. Add toppings like chopped nuts, caramel drizzle, or banana slices.
  4. Chill for 15 minutes before slicing for a cleaner cut.

Notes

  • Use extra ripe bananas for maximum sweetness and flavor.
  • If frosting is too soft, chill for 10 minutes before spreading.
  • Cake can be made gluten-free by substituting flour with a 1:1 gluten-free blend.
