- 1 1/2 cups brown sugar
- 1 1/4 cups plain flour
- 1 cup Dutch cocoa
- 3 eggs, beaten
- 2 teaspoons vanilla extract
- 2 overripe bananas, mashed
- 1/3 cup 70% dark chocolate chips

- Preheat oven to 160°C (320°F). Grease and line a 30cm x 15cm biscotti pan with baking paper.
- Melt butter in a saucepan over low heat. Add brown sugar and stir until fully combined. Let cool slightly.
- In a mixing bowl, whisk together flour and Dutch cocoa to remove lumps.
- Pour the butter mixture into the flour mixture. Stir gently until combined.
- Add the beaten eggs and mix until smooth.
- Fold in mashed bananas, vanilla extract, and chocolate chips. Avoid overmixing.
- Pour the batter into the prepared pan and smooth the surface.
- Bake for 30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
