  • 250g butter
  • 1 1/2 cups brown sugar
  • 1 1/4 cups plain flour
  • 1 cup Dutch cocoa
  • 3 eggs, beaten
  • 2 teaspoons vanilla extract
  • 2 overripe bananas, mashed
  • 1/3 cup 70% dark chocolate chips

  1. Preheat oven to 160°C (320°F). Grease and line a 30cm x 15cm biscotti pan with baking paper.
  2. Melt butter in a saucepan over low heat. Add brown sugar and stir until fully combined. Let cool slightly.
  3. In a mixing bowl, whisk together flour and Dutch cocoa to remove lumps.
  4. Pour the butter mixture into the flour mixture. Stir gently until combined.
  5. Add the beaten eggs and mix until smooth.
  6. Fold in mashed bananas, vanilla extract, and chocolate chips. Avoid overmixing.
  7. Pour the batter into the prepared pan and smooth the surface.
  8. Bake for 30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
