These balsamic roasted mushrooms are a simple yet flavorful dish that combines the earthy taste of mushrooms with the tangy sweetness of balsamic vinegar. Perfect as a side dish, topping, or even a main course, these mushrooms are incredibly easy to prepare and full of umami flavor.

  • 1 lb. mushrooms (white button or baby bella)
  • 1 Tbsp olive oil
  • 3 Tbsp balsamic vinegar
  • ½ Tbsp brown sugar
  • 1 Tbsp soy sauce
  • 2 cloves garlic, minced
  • ¼ tsp dried thyme
  • ¼ tsp freshly cracked black pepper

Instructions

  • Preheat oven to 400°F (200°C).
  • Clean mushrooms by wiping with a damp cloth and slice any large ones in half.
  • In a small bowl, mix olive oil, balsamic vinegar, brown sugar, soy sauce, garlic, thyme, and black pepper.
  • Place mushrooms in a baking dish and coat evenly with the marinade.
  • Roast for 45 minutes, stirring every 15 minutes for even caramelization.
  • Let mushrooms rest for 5 minutes before serving.
  • Garnish with fresh parsley if desired and enjoy!
