  • 1 ½ pounds chicken thighs
  • 1 tablespoon olive oil
  • 3 teaspoons minced garlic (divided)
  • 1 teaspoon salt
  • ½ teaspoon cracked black pepper
  • 8 ounces baby bella mushrooms (cut in half)
  • 2 cups balsamic vinegar
  • ⅓ cup brown sugar
  • 2 tablespoons honey
  • 4 tablespoons butter (divided)

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. In a bowl, toss chicken thighs with olive oil, 2 teaspoons garlic, salt, and pepper until coated.
  3. In a skillet over medium-high heat, melt 2 tablespoons butter. Add honey and briefly stir. Brown chicken thighs for about 1-2 minutes on each side.
  4. Transfer browned chicken to the prepared baking dish.
  5. Toss mushrooms with remaining melted butter, garlic, salt, and pepper; arrange around the chicken.
  6. Bake for approximately 15 minutes until chicken is cooked through.
  7. Meanwhile, combine balsamic vinegar and brown sugar in a saucepan over medium-high heat; bring to a boil then simmer until reduced by half.
  8. Stir in remaining honey and drizzle glaze over baked chicken before serving.
