Ingredients
- 3–4 boneless, skinless chicken breasts or thighs
- 3–4 russet potatoes, peeled and diced
- 1 small yellow onion, sliced
- 2 slices uncooked bacon, chopped
- 3/4 cup shredded cheddar cheese
- 1/4 cup half & half or heavy cream
- 1 tbsp sour cream
- 2 tsp ranch seasoning mix
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 350°F and spray a 9×13-inch baking dish with non-stick spray.
- In a mixing bowl, combine ranch sauce ingredients until smooth; set aside.
- Layer sliced onion in the baking dish followed by diced potatoes; season with salt and pepper.
- Place chicken on top of potatoes; drizzle with ranch sauce, top with butter pieces and bacon.
- Cover with foil and bake for 1 hour; remove foil and broil for 4-5 minutes until crispy.
- Top with cheddar cheese and let melt before serving.
