Description

Baked Jalapeño Popper Chicken Sliders are the ultimate crowd-pleasers! Loaded with creamy cheese, spicy jalapeños, crispy bacon, and tender chicken, these sliders are baked to golden perfection. Perfect for game day, potlucks, or a delicious family dinner, they’re easy to make and impossible to resist!

Ingredients

Scale
  • 12 slider rolls (Hawaiian rolls or dinner rolls)
  • 5 strips of bacon, cooked and finely chopped
  • 8 ounces cream cheese, softened
  • 2 cups Monterrey Jack cheese, shredded (divided into 1 cup for filling, 1 cup for topping)
  • 2 chicken breasts, cooked and shredded (about 2 cups)
  • 2 small jalapeños, seeded and diced

For the Garlic Butter:

  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon garlic powder

Instructions

  1. Prepare the Rolls: Preheat oven to 400°F. Slice slider rolls horizontally in half, keeping the top and bottom attached. Place the bottom halves on a baking sheet.
  2. Cook the Bacon: In a skillet over medium heat, cook bacon until crispy. Drain on a paper towel-lined plate, then finely chop.
  3. Make the Filling: In a mixing bowl, combine softened cream cheese, 1 cup shredded Monterrey Jack cheese, bacon, chicken, and diced jalapeños. Mix until fully combined.
  4. Assemble the Sliders: Spread the chicken mixture evenly over the bottom rolls. Sprinkle the remaining cup of Monterrey Jack cheese on top. Place the top rolls over the filling.
  5. Garlic Butter Topping: In a small bowl, mix melted butter and garlic powder. Brush the butter mixture evenly over the tops of the rolls.
  6. Bake: Bake for 20 minutes, or until the tops are golden brown and the cheese is melted.
  7. Serve: Remove from oven and let cool for a minute. Cut into individual sliders and serve warm.

Notes

  • Use rotisserie chicken for a quick and easy shortcut.
  • Keep jalapeño seeds for spicier sliders; remove seeds for a milder flavor.
  • Sliders can be prepared ahead of time and baked when ready to serve.
