  • Juice of 1/2 a lime
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of water for 15-20 minutes until fork-tender. Drain and let cool before cutting them into 1/2 inch cubes.
  2. While the potatoes cool, halve the avocados, remove the pits, and cut them into cubes.
  3. In a large bowl, combine cooled potato cubes, avocado, cucumber, cilantro, lime juice, salt, and pepper. Mix gently until the avocado coats the potatoes.
  4. Adjust seasoning to taste and serve chilled.
